Use a tested vegetable-fermentation method and treat uncertain food conservatively.
- Weigh salt and prepared vegetables as the tested recipe directs; do not improvise preservation ratios.
- Use sound food-safe glass, clean utensils and appropriate weights, and never allow pressure to build in an unsuitable sealed jar.
- Discard a batch with mould, slime, putrid odour or unsafe time-and-temperature history; do not taste it to decide.
