The short answer

The one-litre Lakeland jar keeps a first experiment manageable. Choose the Kilner set for a household-size batch with weights included, or Masontops when several wide-mouth Mason jars are already part of the plan.

    A jar and valve do not replace a tested recipe or accurate salt measurement.

    Keep vegetable pieces below brine and leave the headspace specified by the method.

    Do not treat an active vegetable ferment as a shelf-stable canned preserve.

Ferment deliberately

Use a tested vegetable-fermentation method and treat uncertain food conservatively.

  • Weigh salt and prepared vegetables as the tested recipe directs; do not improvise preservation ratios.
  • Use sound food-safe glass, clean utensils and appropriate weights, and never allow pressure to build in an unsuitable sealed jar.
  • Discard a batch with mould, slime, putrid odour or unsafe time-and-temperature history; do not taste it to decide.
